Crepes - Gluten Free

Ingredients

eggs

cup
arrowroot powder
3/4
cup
milk
coconut, goat, almond - any kind you like
pinch of
salt
1/2
tbs
coconut oil, butter or ghee
Instructions
Whisk together eggs, milk and salt
Warm up a thin later of coconut oil (or butter or ghee) on a pan
Pour around 1/4 of a cup of the batter (enough to cover the pan) and tilt it with a circular motion so that it it coats the surface evenly
Cook the crepe for about 30 seconds on each side
Notes
Crepes work great with both sweet and sour toppings: jams, confitures, whipped cream, sour cream, cheese, spinach etc.
