Farmer's Cheese Almond Pancakes

I wanted to incorporate Farmer’s Cheese into my kids diet. It is great source of probiotics and protein. It is 99% lactose free. And it includes nutrients such as calcium, phosphorus, protein, and B vitamins. It is much healthier than cottage cheese. (1)(2)

Eggs, almond flour, vanilla extract, cinnamon, flaxseed are additional ingredients that are very nutritious, making it a powerful breakfast food. 

Farmer’s Cheese Almond Pancakes

Ingredients
  

  • 2 Eggs
  • 1/4 cup Coconut milk may substitute for any milk
  • 1 tsp Maple Syrup
  • 1/2 tsp Vanilla Extract optional
  • 3/4 cup Almond Flour
  • 1 tbs Arrowroot Flour optional
  • 1/3 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tsp Cinnamon powder optional
  • 2 tbsp Farmer's Cheese
  • 1 tbs Coconut oil or Ghee

Method
 

  1. Whisk together eggs, milk, vanilla extract and maple syrup.
  2. Add all dry ingredients and mix together.
  3. Add farmer's cheese and stir it in into the mix.
  4. Mix everything well.
  5. Melt ghee or coconut oil on a skillet.
  6. Scoop about two tablespoons of the mix on the skillet.
  7. Cook about 1 minute on each side.

Notes

For easy making I stir everything with a fork in the same bowl. This way I can make it quick in the morning. Or I make the mix a day before and store it in the fridge.
Pancakes are great with maple syrup or any jam (my favorite is prune butter). Having a hot cacao with it, makes it a great meal.
