Strawberry Millet Pudding

“Millet is a good source of protein, fiber, key vitamins, and minerals. The potential health benefits of millet include protecting cardiovascular health, preventing the onset of diabetes, helping people achieve and maintain a healthy weight, and managing inflammation in the gut.” (1)

Strawberry Millet Pudding

Ingredients
  

  • 1/2 cup millet groats
  • 1 1/2 cup milk any kind you like (cow, coconut, almond)
  • 1 1/2 cup strawberries
  • 1 tbsp cane sugar any sweetener works (I like maple syrup too)

Instructions
 

  • Combine millet and milk in a small pot.
  • Bring to a boil and simmer for 15 minutes covered, stirring occasionally.
    It can easily boil over so be on a lookout.
  • Combine cooked millet in a blender together with strawberries and sugar.
  • Blend it to a pudding consistency.
  • Serve as it is or with additional fruit on top.

Notes

Pudding can be eaten hot or cold.
I like to make it ahead of time and warm it up on a stove by adding a little extra milk to it. 
You can get creative by adding any fruit (banana, blueberries, mango etc), maple syrup, cinnamon, coconut flakes.
