Crepes - Gluten Free

Ingredients
  

  • 3 eggs
  • 1/2 cup arrowroot powder
  • 3/4 cup milk coconut, goat, almond - any kind you like
  • pinch of salt
  • 1/2 tbs coconut oil, butter or ghee

Method
 

  1. Whisk together eggs, milk and salt
  2. Warm up a thin later of coconut oil (or butter or ghee) on a pan
  3. Pour around 1/4 of a cup of the batter (enough to cover the pan) and tilt it with a circular motion so that it it coats the surface evenly
  4. Cook the crepe for about 30 seconds on each side

Notes

Crepes work great with both sweet and sour toppings: jams, confitures, whipped cream, sour cream, cheese, spinach etc.
