Cauliflower Soup

My favorite and very easy to make. There is just something very comforting about cauliflower, potatoes, carrots and onion mix. Dill always adds additional aroma to a dish.

Cauliflower is packed with nutrients such as vitamin K, vitamin C, choline and fiber. It is wonderful for digestion, heart health and is anti-inflammatory.

Potatoes are a great source of potassium, fiber as well other vitamins and minerals (including vitamin C, vitamin B6).

Carrots, of course, great source of beta-carotene, fiber, vitamin K1, potassium, and antioxidants. 

Dill is a wonderful anti-inflammatory herb. It’s aroma is just ♥

Cauliflower soup

Cauliflower, potato, carrot, dill soup.

Ingredients
  

  • 1 cauliflower broken into florets
  • 3 carrots cut into small cubes
  • 5 potatoes cut into medium cubes
  • 1 onion diced
  • 2 tbs fresh chopped dill
  • 6 cups chicken broth or water
  • 2 tbs coconut oil
  • 1 tbs butter
  • salt and pepper

Instructions
 

  • Heat a stockpot.
    Add the coconut oil and butter, then the onion and saute for 5 minutes (until softened).
  • Add the carrot and saute for another 2 minutes, stirring occasionally.
  • Add the potatoes and saute for 5 minutes.
  • Add the cauliflower and saute for another 2 minutes.
  • Add the chicken broth or water and simmer, covered for about 20 minutes, or until the vegetables are soft.
  • Season with salt and pepper. Add the dill.
  • Turn off the heat and add the dill.
