Cauliflower Soup

My favorite and very easy to make. There is just something very comforting about cauliflower, potatoes, carrots and onion mix. Dill always adds additional aroma to a dish.

Cauliflower is packed with nutrients such as vitamin K, vitamin C, choline and fiber. It is wonderful for digestion, heart health and is anti-inflammatory.

Potatoes are a great source of potassium, fiber as well other vitamins and minerals (including vitamin C, vitamin B6).

Carrots, of course, great source of beta-carotene, fiber, vitamin K1, potassium, and antioxidants. 

Dill is a wonderful anti-inflammatory herb. It’s aroma is just ♥

Cauliflower soup

Cauliflower, potato, carrot, dill soup.

Ingredients
  

  • 1 cauliflower broken into florets
  • 3 carrots cut into small cubes
  • 5 potatoes cut into medium cubes
  • 1 onion diced
  • 2 tbs fresh chopped dill
  • 6 cups chicken broth or water
  • 2 tbs coconut oil
  • 1 tbs butter
  • salt and pepper

Method
 

  1. Heat a stockpot.
    Add the coconut oil and butter, then the onion and saute for 5 minutes (until softened).
  2. Add the carrot and saute for another 2 minutes, stirring occasionally.
  3. Add the potatoes and saute for 5 minutes.
  4. Add the cauliflower and saute for another 2 minutes.
  5. Add the chicken broth or water and simmer, covered for about 20 minutes, or until the vegetables are soft.
  6. Season with salt and pepper. Add the dill.
  7. Turn off the heat and add the dill.
