Crepes - Gluten Free

Eggs are a nutrient powerhouse. They are loaded with a range of essential vitamins, minerals and antioxidants. They are great source of protein and healthy fats. That is why, I am always trying to incorporate into a diet. 

Arrowroot powder is a great gluten free flour option. It is great for  your gut health and has high potassium and vitamin Bs content. 

Crepes are very versatile. They can be sweet (with jam, whipped cream, fruit) or savory (cheese, spinach, chicken).

 

Crepes – Gluten Free

Ingredients
  

  • 3 eggs
  • 1/2 cup arrowroot powder
  • 3/4 cup milk coconut, goat, almond – any kind you like
  • pinch of salt
  • 1/2 tbs coconut oil, butter or ghee

Instructions
 

  • Whisk together eggs, milk and salt
  • Warm up a thin later of coconut oil (or butter or ghee) on a pan
  • Pour around 1/4 of a cup of the batter (enough to cover the pan) and tilt it with a circular motion so that it it coats the surface evenly
  • Cook the crepe for about 30 seconds on each side

Notes

Crepes work great with both sweet and sour toppings: jams, confitures, whipped cream, sour cream, cheese, spinach etc.
